Balsamic Pork Chops

Backpacking: No Effort: easy Serves: 3-4 Prep time: 1-30m
 
Ingredients:
  • 2 ts Olive oil
  • 4 Pork chops; 1 inch thick
  • Salt
  • Freshly ground pepper
  • 1/4 c Minced shallots
  • 1/2 c Chicken broth
  • 1/4 c Balsamic vinegar
  • 1/4 ts Thyme
  • 1 tb Butter or margarine
 
How to Prepare:
1. Heat oil in skillet over medium-high heat, 2 minutes. Sprinkle pork chops with salt and pepper. Add to skillet and cook 5 minutes per side. Transfer to platter and keep warm.

2. Add shallots to pan; cook, stirring, 1 minute. Add broth, vinegar and thyme; cook, stirring, over high heat 5 minutes. Remove from heat; stir in butter. Pour over chops.
Serves: 4 Servings
