Boil in a Bag

Ingredients:
  • 6 slices bacon
  • 2-3 eggs
  • butter
  • salt
  • pepper
  • plastic zip lock baggies
 
How to Prepare:
First brown the bacon until crispy, take off frying pan and crumble into little pieces into sandwich bag. Whisk the eggs in a bowl and then place in baggy with the bacon. Add your salt and pepper and your butter, zip the freezer bag or sandwich bag and put into boiling hot water until done.

This really works great! I do prefer freezer bags since they are thicker. You can use just about any sort of vegetable that you would normally include in an "omelet". Another alternative to the whisking the eggs before pouring them into the baggies is to empty a couple of eggs directly into the baggie, add additional ingredients, and then "squish" once it is sealed - kids really love this part! One of the best things about this recipe to me is that the eggs turn out shaped perfectly for wrapping in a tortilla! Just add a little salsa and you are good to go!

This is a great mess-saver, especially when following the tip from Laura Jackson to squish-scramble the eggs in the bag. We added salsa, spinach and bell pepper to our eggs and spooned them out onto tortillas.
At one point our boiling water got a little too hot and the ziploc popped open, but we were able to save it before any water got in. So keep your eye on that.

Cutting the bacon in to small pieces before cooking will speed up the cooking time, and it's ready for adding to the egg mixture.

I tried this recipe this weekend and loved it. It really saved time and a huge mess. I hate camp dishes, so this was great. We added some lunch meat to the eggs for a perfect omelette. Everyone was skeptical the first day, but wanted to try the eggs in a bag the second morning.
