| Ingredients: |
- 1 medium potato (per camper, sliced)
- sliced onions-approx. 1/8 cup per camper
- 1/4 cup sliced carrots per camper
- 2 teaspoons water per camper
- shredded cheddar cheese and salt & pepper to taste
- garlic powder (if desired)

| How to Prepare: |
For each packet, lay out 2 sheets of foil approximately 1-1/2 feet long. Place potato slices, onion, and carrot in middle of foil. Add salt, pepper, and garlic powder (if desired) to taste. Sprinkle 2 teaspoons water over each, and fold to form a packet.
Place on grill over coals and cook for approximately 15-20 min. per side. Open packet and check to see if potatoes are cooked thoroughly-if not, reseal and place back on grill.
When potatoed are cooked, open packet and sprinkle shredded cheddar cheese (as much as you like-usually about 1/4 cup is good) over the top. Reseal for about 2 minutes or until cheese is melted. Open packet and enjoy!!!!
Note-I have been preparing this for about 10 years with my Girl Scout troops and have never had any child dislike it!! Even the little ones can help assemble their own packet with some assistance with the veggie cutting.... |
