Delicious Citrus Chicken

Backpacking: No Effort: easy Serves: 5-6 Prep time: 1-30m
 
Ingredients:
  • 5-6 whole skinless chicken breasts (I prefer boneless and skinless)
  • Salt
  • Pepper
  • oil
  • Itallian Seasoning
  • Lemon Pepper
  • 3-5 cloves of garlic sliced
  • 1 whole lemon sliced
  • 1/2 cup orange juice
  • 2 lbs carrots and potaotes cut into 1-2 inch chunks
 
How to Prepare:
Place chicken in a large bowl
Combine 1-2 tbs each of the spices
Coat chicken with spices.
Layer chiken bone down in the bottom of Dutch Oven.
Layer sliced lemon over the chicken.
Toss vegetables with 1 tbs oil, garlic, 1 tbs ittalian seasoning, lemon pepper adn salt.
Dump carrots and potatoes in on top.
Cover and place on coals.
Place 10- 15 hot coals on top of dutch oven.
LEAVE ALONE FOR ABOUT 2 HOURS
To Serve
Transfer vegetables to another dish.
There will be alot of YUMMY juice.
This recipe works well with a 5-6 lb whole chicken.

CAMPING TIP

When camping with smaller children, put a bar of soap in one leg of a pair of pantyhose and tie a towel to the other leg. Secure pantyhose to a tree at your campsite (we knot the legs around the tree). Hang a hot-water shower next to the soap, and you have a handy washing station that will eliminate the need to walk to the restrooms to clean messy hands and faces. Note: Hanging soap is not bear-friendly.
