Make mashed potatoes, either by boiling the potatoes and mashing with butter and milk, or use instant potatoes. Take a square of foil, and place a damp paper towel on it. Fold in a square, so the paper towel is covered up. This will keep the bottom from burning the food.
Place this square in the middle of a large square of foil, that is laying flat. Next, on top of the small square of foil-covered paper towel, plop a mound of mashed potatoes. Add cheese (we like sharp cheddar), and bacon pieces. Fold up like a Hershey Kiss, and place on hot coals for for 15-20 minutes. Open packet and eat!

CAMPING TIP
When cooking over the campfire start with a teepee fire. This will quickly create coals. Next build a log cabin fire with larger wood. This will keep the heat in, create more coals, and provide a cooking surface.
