7 potatoes - preferably Idaho - can also use sweet potatoes as a good alternative
4 apples - Granny Smith or Red Delicious hold up best
3 onions
1 cup shredded cheddar cheese
8 large flour tortillas
8 pieces large pieces of Aluminum foil

I created this dish one year for several friends and myself when we decided to camp out one late fall weekend. It is still a favorite. Although I have tried the same thing at home, it just doesn't taste the same as that smoky flavor when it comes straight from a campfire. Enjoy this light but filling meal.
Peel and chop potatoes, apples and onions. Mix together. Spread on tortilla and add a layer of cheese. Roll up and roll in foil. Bury under hot coals for about 1 hour. Remove from coals and enjoy!
